Ingredients:
- 2 acorn squashes
- 2 tbsp. of butter, 1 onion, 1/4 tbsp. nutmeg
- 1 14.5-oz can of chicken broth.
- 1/4 tsp. of salt
- 4-3 inch slices of Italian or bread
- 4 slices of Swiss cheese

Procedure:

1. Wrap both the squashes in a paper napkin and put it in microwave. Cook them for 5 minutes. No need to pierce their skin first. Turn them to another side and microwave for 4 more minutes till the squash is little bit tender, now pierce it with knife. Take them out of microwave and keep as it as for 5 more minutes.

2. Till the squash become cool, melt the butter in a large sauce pan and on other side keep onion slices on medium heat.

3. As the squash get cooled little, cut it in half, take out the seeds, when it is completely vacant, add the pulp to the onion and cook it for few more minutes.

4. Now add nutmeg, broth, cayenne and salt into it. Boil it after that simmer it for 9-10 minutes, it should be covered at that time.

5. Smash the squash mixture in a blender or food processor.

6. Again heat the soup mixture and put together the squash shells in oven proof sound bowls and set them on a baking sheet.

7. Fill the squash shells with soup and cover them with them the small slices of toast and cheese.

8. Now boil this for 3 minutes.
