Classic Cookies - 3 Drop Cookie Recipes

We are a family who loves to make cookies. We actually give away or share tons of cookies each and every year. We offer them to others for birthdays, holidays and often "just because."
Drop cookies got their name from the fact that you drop them off the spoon onto the baking sheet. No forming or rolling required.
I'd like to share one of my favorite chocolate cookie recipes with you:
1/2 cup cocoa
1 3/4 cups flour
1/2 cup butter
1 cup sugar
3/4 cup sour cream
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
Chocolate chips and/or nuts (optional)
Mix the butter and sugar together. Lightly beat the egg and then add in the egg and vanilla. Once mixed, stir in the sour cream. In a small bowl, combine the dry ingredients. Pour them into the sour cream mixture and mix well. If you are adding in nuts or chocolate chips, gently fold them in.
Drop onto cookie sheet and bake about 10 minutes at 375 degrees.
We made a chocolate drop cookie this past week and frosted them with a white frosting. They came out great. With frosting you can also add on sprinkles or other cookie decorations.
When we make drop cookies, we use three different cookie sheets. I have one in the oven, one with cookies ready to go into the oven and one that is cooling from the last batch. If you place drop cookies onto a hot cookie sheet they will begin to spread. Allow your cookie sheet to cool in between batches.
When blueberries are in season, I love to make both breads and cookies using fresh blueberries. This is an easy to make cookie recipe:
1 cup blueberries
2 cups flour
1 cup sugar
1 egg
1/2 cup butter, softened
1/4 cup milk
2 teaspoons baking powder
1 1/2 teaspoons lemon zest
1 teaspoon almond extract
1/2 teaspoon salt
Mix together the butter, sugar, egg, milk, almond extract and lemon zest. In a separate bowl, mix together the dry ingredients. Add this to the milk mixture and mix well. Lightly fold in the blueberries. Drop onto ungreased cookie sheet. Bake about 12 minutes at 375 degrees.
Do you have Cornflakes that are getting stale at your house? If so, this third recipe is perfect for you. They are called Cornflake Drop Cookies:
3 cups flour
2 cups of cornflakes
1 1/2 cups sugar
1 cup butter, softened
1 cup plain yogurt (I've used sour cream when I don't have yogurt)
3 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
Mix together the sugar and butter. Add in the eggs, baking soda and milk. Mix well and then add in the cornflakes. They will break a bit as you mix, but don't intentionally break them. Add the remaining ingredients and mix until well blended. Drop onto greased cookie sheet and bake about 10 minutes at 350 degrees.
Drop cookies come out flat and round after baking. You can make frosting or eat them plain. I also love to add in mini M&M's to white dough drop cookies. If you like nuts, add in ½ to one full cup of nuts depending on how nutty you like your cookies. Nuts can go into both white cookies and chocolate cookies.
