Mushrooms With Sherry And Walnuts Recipe

This is a Spanish mushroom recipe that will impress any mushroom lovers in your family.

It serves roughly six, and is good as a side dish or an entree depending on portion sizes.

Fresh Mushrooms With Sherry and Walnuts Recipe

Ingredients:

Two Tbs dairy butter
Two Tbs healthy oil
1/2 pound (3 cup) mushrooms
half a cup walnuts - finely chopped then toasted lightly
Two Tbs sherry or fortified wine
One Tablespoon freshly squeezed lemon juice
1 t. lemon peel, grated
Two Tbs parsley (finely chopped)
Salt

Instructions:

In a large skillet heat gently and melt the butter and oil together.

Increase the heat to medium and put the mushrooms in the skillet, cook lightly for a few minutest, stirring gently.

Now add the sherry, lemon juice, walnuts and citrus peel. Cook the mix for about a minute, stirring well to ensure the mushrooms are well coated with the juices.

Add salt to taste, and sprinkle with chopped parsley just before serving.
