A variety of meats and side dishes are used while barbecuing. Typically beef, pork, and fish are what families cook on their grills. In your neighborhood grocery store try to find meats that are already prepared for barbecuing.

For traditional side dishes, there are potato salad, beans, and coleslaw. Each one of these sides work well with different meats and they are easy to cook and store until it is time to eat. Pickles, onions, and relish are need to be included in your traditional condiment bar.

1. While marinating before you cook may add flavor, covering your meat in barbecue sauces before cooking will dry your meat out, and may even cause it to burn. It happens since a barbecue sauce has great amount of sugar and fat that burn easily. Though if you season the meat gently, it would not have any negative effects and works well.

2. Always spray the cooking area with a nonstick spray before you start cooking. This procedure will help to prevent your meat from sticking at the time you are rotating or removing it. The meat loses plenty of juice if it sticks and tears, and might get dried out.

3. Always watch for the grill to get to the proper temperature prior to setting food on the grill. The variations in heat while the grill is warming up cause the meat to burn or dry out. Be sure the coals are completely gray before placing the meat on the grill when you are using a charcoal grill.

4. When you sear the meat, it would lock in juices and taste, but you should not cook the meat at that heat all the time. Cut down the heat after you have seared both sides. This would ensure that your meat is full of flavor and tender.

5. Do not poke the meat when it is cooking. Poking the meat may make the juice to leak out. It makes the meat dry and you in addition could likely damage your grill.
