Walnut Banana Cream Cake

Walnut Banana Cream Cake
This cake has the perfect mixture of Walnuts and bananas. A wonderful desert, not to sweet not to filling.

NOTE: You can peel your bananas and place in a heavy duty freezer bag, and freeze until you have enough, or are ready to make.

Ingredients:

1 Super moist yellow cake mix

1 1/2 Cups mashed ripe banana (about 3 medium bananas)

1/2 Cup Water

1/4 Cup of vegetable oil

3 eggs

1 1/2 Cups chopped Walnuts, divided

Frosting

8 oz. Cream Cheese

1/2 Cup margarine, softened

3 Cups Confectioners' sugar

2 teaspoons Vanilla extract

Sliced banana, Optional for topping

Preheat over to 350 degrees F. Beat cake mix, bananas, water oil & eggs in a large bowl. With an electric mixer set at high speed until very well mixed about 2 minutes. Scrape bowl and mix 1 more minute. Stir in 1-Cup walnuts with a spoon.

Grease and flour two, 8-inch cake pans. Spoon batter into pans. Bake until they test done with a toothpick. (Until toothpick comes out clean when inserted in center of cake.)Place on a rack to cool.

For Frosting:
Beat cream cheese, softened margarine in a medium mixing bowl at high speed until light and fluffy. Add confectioners' sugar and vanilla. Beat until smooth about 1 minute.

Remove cake from pan dust off sides.(brush off crumbs) Place on plate topside down. Spread frosting to cover top, and sides and add 2nd layer frost entire cake.
Spread remaining nuts and add the banana slices. (If so desired)

NOTE: If for some reason cake comes out lopsided from the oven, remove from pan. Place on a plate and carefully cut off the highest part to make it a flat as possible.

Serving Suggestions: Serve with Banana Sorbet, or favorite Ice Cream.
