Fiery Foods Without The Burn

Your pallet may suffer boredom unless you consciously seek out ways to tantalize your taste buds. For many, zip and zest comes from foods with flavour and spice, particularly during the winter comfort food season. As two-thirds of Canadians know, several of these foods can cause heartburn, which sometimes limits people from enjoying and experimenting with new tastes. By preparing in advance and keeping heartburn medications such as Pepcid handy, you can ensure culinary experiences are enjoyed to the fullest.
One of the best ways to prevent heartburn and avoid the pain that comes with it is to eat right. Here are some delicious, flavourful comfort food recipes that are sure to tantalize your taste buds:
Chicken Jambalaya  
Ingredients:  
2 cups chicken breast, cooked, skinned and diced
2 tbsp. olive oil
1 onion, chopped
2 cloves garlic, minced
1 stick of celery, chopped
1 red bell pepper, chopped
1 can whole tomatoes
1 cup long grain rice
1/2 tsp. dried thyme
1/2 tsp. dried basil
1 1/2 tsp. Cajun spices
1/2 tsp. black pepper
2 cups chicken broth
1 tsp. Tabasco
2 bay leaves
Directions:  
Heat oil in a large skillet.
Sauté onion, garlic, celery and red pepper until soft.
Add canned tomatoes with their liquid, rice, thyme, basil, Cajun spices, pepper, chicken broth, Tabasco and bay leaves.
Bring to a boil, reduce heat and simmer until rice is tender.
Add chicken & heat.
Serves 4.
Shrimp Diablo  
Ingredients:  
2 jalapeno peppers, seeds removed
2 red chili peppers, seeds removed
3 large tomatoes
1 cup fresh cilantro
5 cloves of garlic
4 tbsp. olive oil
1 onion, chopped
3 lb. shrimp, peeled and deveined
1/2 cup white wine
salt and pepper to taste
1 lemon thinly sliced
Directions:  
In a food processor combine jalapeno peppers, chili peppers, tomatoes, cilantro and garlic.
Heat olive oil in a skillet.
Sauté onions until soft.
Add shrimp, sautéing until pink.
Add spice mixture, white wine and salt and pepper.
Simmer until hot and bubbly.
Serve over rice and garnish with lemon slices.
