How To Make An Old - Fashion Meal Featuring Community Chicken A La King

There is just something comforting about an old-fashion meal that we never seem to outgrown.  Here are some recipes for an old-fashion meal that is simple, comforting, and very tasty.  These are old time recipes that are as good today as they were many years ago.  Make this simple meal to share with your family soon.  The Community Chicken has chicken, vegetables, egg, and milk all in the one dish.  Served over biscuits, gives you your bread, too.  A simple salad is all you really need to round out the meal.  The Old Fashion Blackberry Cake recipe makes a great dessert to finish off this old time comfort meal.
COMMUNITY CHICKEN A LA KING
I call this "Community" Chicken A La King because it is from the community where I went to school (yes, I am old--1st thru 12th grade in one building and no kindergarten).
1/2 cup sliced mushrooms
1/4 cup shredded green bell pepper
1/4 cup diced onion
4 tbsp butter
3 tbsp flour
2 egg yolks
1/2 tsp salt
2 cups diced cooked chicken
1 cup chicken broth
1 cup milk
1/4 tsp paprika
Saute mushrooms, bell pepper, and onion in butter. Add the salt and flour to the mushroom mixture and blend. Blend the egg yolks with a small amount of the broth and add to the vegetable mixture. Add remaining broth and milk gradually, stirring constantly, and cook until sauce thickens. Add chicken and paprika. Place over hot water and cook slowly for about 10 minutes. Serve over hot biscuits; make your own or cheat a little and use biscuits from the grocery store's freezer!
OLD FASHION BLACKBERRY CAKE
3 eggs
1 1/2 cups sugar
1 1/2 cups lard or shortening
2 tsp cinnamon
1 tsp cloves
2 cups blackberries, crushed
3 cups flour
2 tsp baking powder
1 tsp baking soda
Combine the eggs, sugar, shortening, cinnamon and cloves in a large mixing bowl. Beat mixture until well blended. Add the flour, baking powder and baking soda along with the blackberries. Mix well. Pour the batter into a greased square pan. Bake in a preheated oven at 350 degrees for 35 minutes or until a toothpick inserted near center comes out clean.
