For really light and fluffy pancakes, separate the eggs. Add the egg yolks where the recipe calls for eggs to be added in. Beat the egg whites separately, and fold in at the very end. Baking powder and baking soda are added as a raising agent to the batter. Some recipes include melted butter for better taste. Also such ingredients as vanilla, sugar and salt are optional. But I usually use them. Sometimes I like adding other spices such as nutmeg or cinnamon.
Here is a recipe for delicious blueberry buttermilk pancakes:
Pancake ingredients:
- 2 cups all-purpose flour
- 2 cups buttermilk
- 2 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 21/4 teaspoons baking powder
- 1/4 cup sugar
- 1 cup blueberries, fresh or frozen
- 1/4 cup melted unsalted butter, plus some for frying
How to make blueberry buttermilk pancakes:
- Take a large bowl and sift together the flour, sugar, baking powder, baking soda, and salt.
- In the other bowl, beat the eggs with the buttermilk and melted butter.
- Combine the dry and wet ingredients into a lumpy batter and remember that you have to be careful not to over mix the batter, because it may result in flat heavy pancakes. Add blueberries to the batter.
- Heat some butter or oil in a skillet or on the frying pan over medium heat. Put ¼ cup of batter into the skillet. Cook each side for about 2-3 minutes or until you see that it is golden brown. Serve immediately with desired syrup.
Tip:
To create your own pancake mix, measure several batches of the dry ingredients. Keep stored in air-tight container. Shake to combine before using the pancake mix.
