How To Cook Delicious Chicken Tikka In An Indoor Grill

Several Indian cuisines renowned to be spicy, but now very popular in the US can be prepared at home with ease. Myself, being an indoor grill connoisseur, will now give out the recipe of one of the most popular Indian/Asian chicken dish, perfect for your favorite indoor grill.

I am referring to Chicken Tikka, which is not only famous in India but also other South Asian countries and the Middle East. Tikka means pieces or chunks (boneless). Chicken tikka is a simple to cook dish which is marinated in some special spices and then normally grilled on skewers in an open fire grill. Well, we all do not have a fire grill at home so we will improvise in the indoor grill, without sacrificing the taste and aroma.

Ingredients:

Boneless Chicken breasts2 lbs
Fresh Yogurt1 cup
Onion1 large
Ginger Paste2 tbsp
Garlic Paste2 tbsp
Cinnamon 1 tbsp
Cardamom1 tbsp
Cloves6 pieces
Black pepper4 tbsp
Lime Juice3 tbsp
Orange food coloring2 tbsp
Cilantro1 cup

Cut the boneless and skinless chicken pieces into 2 inch chunk lengthwise. Grind the cinnamon, cardamom and cloves (preferably in a coffee grinder). This is known as garam masala in India which adds to the aroma of the chicken tikka. Mix all ingredients except cilantro, onions and yogurt in a food processor to a fine paste. Add yogurt to the marinade and then add the chicken pieces to it. Mix well and refrigerate the contents in a covered bowl for 3-4 hours.
Pre-heat the indoor grill to 350 degrees, and then put the marinated chicken pieces slightly apart from each other in the grill. Let is cook for 8-10 minutes turning them as many times desired for even cooking. When the chicken pieces turn brown and are tender, they are ready.

Place then on a plate and garnish with sliced onions and chopped cilantro. Squeeze lime juice on the chicken tikka pieces serve and enjoy. If you are using a contact grill like a George Foreman G5 grill, then there is no need to flip the chicken and you can cook for 5-8 minutes for even cooking.

Using the same above ingredients, you may also prepare fish tikka which is equally delicious. Just reduce the grilling time to 5-6 minutes. My choice of fish will be salmon, mahi mahi or Chilean sea bass.
