Vegetarian Breakfasts Made Easy

Making a healthy breakfast couldn't be easier with these quick vegetarian breakfasts. These simple meal ideas which contain short ingredient lists and fresh, flavorful, and natural food will make these recipes a great choice for anyone. Each recipe makes 2-3 servings and will have you in and out of the kitchen quickly and easily.

- Cheese and Berry Salad: In a mixing bowl, combine one cup of blueberries, two navel oranges (peeled, pith removed, cut in quarters and sliced), and two tablespoons of chopped pecans. In a smaller bowl, combine a half-cup of ricotta cheese and one tablespoon of honey. Add the cheese mixture to the fruit and nuts and toss well to combine and serve. To add a little boost of extra flavor, try adding a little chopped fresh mint to this easy fruit salad.

- Quick Egg Salad: Just combine chopped hard boiled eggs with either a low-fat mayonnaise or plain low-fat yogurt, a sprinkle of dried chives or fresh chives, a dash of paprika, and some chopped vegetables and extras of your own choosing, such as (celery, green bell pepper, roasted red pepper, jicama, pitted olives (black or pimiento stuffed), capers, scallions or sun-dried tomatoes). You could also mix the salad with a little mustard, pesto or a flavored hummus instead of the mayonnaise. This is a great quick breakfast to take to work along with some whole grain rolls or muffins and a piece of fruit.

- Pasta and Fruit: Take some leftover plain cooked pasta and combine it with some diced apples, canned and drained mandarin orange segments, dried cranberries, some cubed firm tofu, and chopped hazelnuts. Toss all ingredients with some plain low-fat Greek style yogurt. Drizzle with a little maple syrup, honey, or agave syrup if desired.
