This sinfully delicious treat is an ultra-healthful banana–chocolate chip macaroon ice cream full of chewy bits of pure fuel that tastes of sweet indulgence. Think of it as ice cream with all of the good and none of the bad ― it just doesn't get any better than this!
1 cup almond or walnut milk
2 medium or 3 small frozen bananas, cut into chunks
⅓ cup raw cashews
1/4 cup unsweetened coconut, finely shredded
2 tablespoons raw cacao nibs
1 tablespoon raw honey or maple syrup
1 tablespoon raw, unrefined coconut oil
1 teaspoon vanilla extract
pinch of sea salt
1 Put the nut milk, bananas, cashews, coconut, cacao, honey, oil, vanilla, and salt in a blender and blend on medium for 30 seconds, then blend on high until the texture resembles thick ice cream, about 30 seconds longer. Expect tiny bits of coconut and cacao nibs throughout.
2 Serve immediately in your favorite bowls, eat slowly, and savor the flavor. If the recipe is allowed to thaw a bit, it can be consumed as a shake.
